I saw a guy at my last HPDE that was running a Ford Focus, he had an in-car camera set up using a metal bar, drilled in two places so that the headrest supports could pass through it--this way it could be mounted between the headrest and the seat body.
The bar was long enough to extend out into the area between the passenger seats, and had a stud w/ a bolt to hold it on that was used to attach the camera.
If you've got access to basic metalworking tools, you can make one of these for cheap!

Bought one of these for my Father. I made one for myself from aluminum and by the time I was done it cost about $5 less then one from Cruisecam.
The cruisecam unit is well built and adapts to every car without doing any damage to the interior.

for my last in car video, I just used my tripod and bungee cords. I put one leg on each side of the floor (passenger and driver), so it was straddling the hump. The third leg was on the hump on the back seat. I bungeed the third leg using the lower inner car seat mounts. My bungee cord hooks fit perfectly into the hold and around the car seat mount. I bungeed both the other legs to the seat rails. It turned out to be very sturdy, and all I spent was $5 on bungee cords, since I had the tripod already. Except for my wheel hop, it didn't move. I didn't even have it strapped down as tight as I could have.
