What viscosity oil are you running?
The volume of oil in the pan shouldn't effect oil pressure unless its low. The oil pump ultimately determines oil pressure which can be effected by the state of the engine (worn engine components, quality of of oil system, et al).
Another component that can effect oil pressure is the bypass in the system. If the bypass doesn't open at the correct pressure then the oil system will operate at a higher pressure.
Beyond that, all I can think of is a faulty sensor.
