Changing Rear Axle Gears and Getting Them Set Up Correctly is a Real Pain. If Not They Whine and or Wear Out Prematurely. I worked at A Lot of Ford Dealers over the Years and Usually only 1 or 2 Guys in the Shop Could Do Them Correctly. Just an FYI!
As Far As a Performance Upgrade it Really Depends on the Spread. Say If You Had 2.73 Ratio and Went to a 3.73 You Would Really Feel it and of Course the Car Would Run at a Higher RPM at Same Speed. Now Say You Got 3.45's and Went to 3.73 It Would Be Barely a Change. So What You Have now Will Determine if a Swap Would Give You Much Gain.
Searching Around The Forums Some Say 4.10's on The V6 But Again What You Got Will Determine How Much Gain. A 2.73 to 4.10 Would Certainly Give you Quicker Response But At the Loss Of a Lot of Top End Speed and A Lot Of Increased Rpm at Highway Speeds.

The Rpm Calculator Will Show You How Much Your RPM's Will Change with a Gear Change. That Article Link I Posted Talks About All The Mustang Rear Axle Options. You Will Likely Need Tuner or Speedometer Calibrator if you Want the Speedo to be Accurate. I believe Your Overdrive Gear Ratio is Around .70 For The Chart.
