Which oil does anyone reccomend? I have a 1968 Fastback, is 10W-30 alright?

I use it....Castrol Syntec... for my 289....if you have a motor with some serious ***** (400-500hp), you might want something a little heavier...

My engine is stock-ish so probably puts out about 230hp, small block 4 barrel, what about Motorcraft 10W-30

I use Mobil 1 10-30 in everything I drive.
as far as the oils weight goes, it all comes down to what kind of bearing clearances you're got.
watch your pressure gauge...
if it's real high all the time, you can probably drop down a grade.
if it's drops a bunch once it's warm, you should run a bit heavier.

What's a quart of that cost? If you are going to pay a premium, might as well get a premium synthetic oil. I also use Mobil 1 in both my Mustangs (10w-30 in the 66, 5w-30 in the 98). It costs a little more, but I change it every 7500 miles so I get my money's worth. The 98 has used it since the first oil change at 1500 miles and absolutely no problems.

I think that's because older engines tend to leak more, and if there are any leaks, the synthetic will find them. But the quality of the synthetic oil is better than non-synthetic regardless of the engine size or age. Just remember not to mix it - if you're using regular and going to synthetic, replace it all.
