What would it cost to have a typical Mustang shop add A/C to a '70 Boss or Mach 1 ? And, do you think it would harm the value of a non-A/C car that's numbers matching ?

It would most certainly detract from a Boss 302, as none of them came with AC from the factory, if my memory serves me right. "Boss 2's shall not be modified." says right here in my manual. B)

At KAR Mustang I found this info on adding A/C:

$2,150.00 1965/66 Conversion to factory air conditioning.
and under "Option Additions We Do Not Recommend:"

ยท Conversion to factory air conditioning in 1967-1973 Mustangs.
Reasons: Cost prohibitive and scarcity of parts.
Boss 302's are extremely expensive to begin with. $30-40k or more is not unreasonable. Mach 1's are more common and less expensive and they did come with A/C as a option. Shop around and you'll be able to find just what you want.
