Question 275/40R19 tire pressure?

Recently I replaced my rear oem 255/40R19 tires for 275/40R19 size that are mounted on oem brembo wheels (9X19). My door decal mentions a 35 psi tire pressure for oem size tires. Which should it be the right psi for both size tires for street driving and for track work?

My falkens say 51 psi max. I was at 40 for a long cruise. Hope it wasn't "overinflated"
