How do you remove the plastic lens on the Map Lights on a 2013 GT to change the bulb? Any help would be appreciated!

To remove just the lens, you just need to (carefully) pry it open with a small flat-head screwdriver or similar tool. Although, it's just as easy to pull the whole assembly off, which all you have to do is grab and pull (just be a bit careful, as there are wiring harnesses on the other side that are attached). It's held into place with tabs, but once off, you can access the back end of the light connectors, which make it easier to replace the bulbs (and to pop out the lenses if needed).

When I was replacing the bulbs (by just removing the lens cover), I actually ended up pushing the light connector out of the socket, which made me have to pull off the assembly anyway and that's when I found out it was much easier that way... LOL!
