Well kids, as usual things went in a completely different direction. I checked FB Marketplace and Craigslist for several days, and the wheels that showed were either too high for used wheels, to far away, or they were in the same condition as mine, pearling, road rash, etc. So, with the help of my dearest we setteled in on this wheel, got a good deal from Discount Tire, and ordered.
Konig Tandem 17x8, 35 offset.

That should look sharp as hell. Nice choice and I hope that they fit perfectly for you. I'm sure they will. Looking forward to photos afterwards.

I'm hoping so brother. I'm sure you know how it is when it comes to picking the right wheel. It's a toss up sometimes. The offset on these wheels will push the tires out approx.1/3rd of an inch, not enough to cause a problem. Now I'm hoping the guy with the FR500's will come through.

Here's a pic of the wheels installed. It's amazing how a new set of wheels can completely change the looks of a car. I've got a good ceramic coating on them, and it's ready to ride.

Here's another option: American Racing Torque Thrust 2 (VN215) custom wheel
I had Discount Tire try to fit various combinations of the $179/wheel VN215 to my 2007 Shelby GT to replace the hidious chrome wheels, but no luck on the sizing and backspacing to correctly fit. So I had to "bite the bullett" and have American Racing build me a set to fit and they came out great and are much higher build quality (Made in USA). I run them without the domed center caps to give my car a nostalgic 1966 GT350 look.
Here are the specs:

Thanks for sharing images of your American Racing Wheels, they look really great on your 2007 Shelby GT... However. some of us on these forums are unable to afford the cost of purchasing a set of wheels which are a one-off/custom build...
Meanwhile, welcome aboard!

Lots of guys on these forums will spend $2K on superchargers, suspension or full exhaust systems -- so it's likely more a matter of "where on the car" to invest the money.

The wheels I bought came with the center cap, and a "Konig" stick on logo to go on the cap. I left those off, and am going to order as set of these old school style. A big thanks to @VGMStudios for suggesting this company.

Although Some Picture Loss Might Want to Gander at These From Back in The Day. The Dish on The Bullits Does Look Nice So Does Polished or Chrome! If you were to Go With Stock Wheels I would Have Either All Polished or Polish All But Originally Painted Section and Paint That Car Color. BTMO!
Oh, Something Else Usually the aftermarket Wheels Use the 04 Prior Style Center caps Which Recess Vs Lay on Top of Wheel.

I Like the Looks of the 18" Oem Polished and These Bullits as Far as The Two Forums Go!

I'll just put it this way, I don't recall from memory coming across posts from members here on TMS who forked over $2k for a set of wheels, but if they did? Then I honestly just don't remember

Well fellers (that's fella's in southern), it looks like I made a bad choice with the Konigs. After 3 tries at 2 different Discount Tire stores, they still can't be balanced. There is still a vibration that comes, and goes without any regularity after 55 mph.The car was smooth as a babies butt with the factory wheels, and the new Falken tires. So, I've given up on balancing and thinking one or more of the wheels just ain't right somehow. I'm asking for a new set of wheels (not Konig for sure). I've got an email sent to the big boy in Arizona that assisted me in purchasing the wheels, and we'll see if their much touted warranty is as good as they say. I'll keep you updated.
BTW, if they do come through I'm thinking I'm gonna just go with my first choice of the AR105 American Racing wheels that look like the Bullitt wheels. Just keep it simple this time.

Hopefully it is Not a Tire Issue!
I wonder if They can Spin Up the Wheels Less Tires and See What Pops Up???
I do Like Your Second Choice Looks Like One of My Choices!
