Should I take the plunge?
If it was me id save up a little more and wait for the next full-on SE (boss?) to show up and pick up one of them.
But in the end its all up to you, if you think youll be happy with this then scoop it up.

I decided to pass on for now. Just not something I need right now and I still want to try and find a GT500. I love this car and what it represents but if I am going to take the plunge into a new mustang I intend to go all the way.

IMO, you would not regret waiting for the GT500. Just let it breathe and it makes a noticeable difference in power.
Sounds like it is the GT500 05retro really wants. Wait it out for what you really want unless you do a step mid range and meantime expect to trade up later.

A mid range trade up is an option but I cant justify losing value on two cars before I get the one I really want.
For me, 500hp is too many ponys for the daily driving that I'd do. Sure, it's a lot of fun, but there isn't a whole lot of room to open one up unless on the track and I'm not a track guy. So, the Bullitt is the better fit. But, if you want the GT500... wait it out.

I took advantage of the rebate in 2001 although the circumstances appear to be different now. The '01 Bullitt was classied as a Mustang GT with the Bullitt package. It seems lately Ford has been more specific on models and how rebates are applied to them. The window sticker will be a good indication and a guide for possible rebates.
If you want to see something silly, check out Ford's site regarding the rebates on the Bullitt. It runs from 10/2/07 - 11/30/07! Plus you must "Take new retail delivery from dealer stock by 11/30/2007"! Stupid Ford site...
