First, the GT500 did not exist yet when the movie was filimed but the real givaway on what the actual car is are the scenes where the interior is shown. There is an automatic shifter and a GT dash. Also several of the exterior scense can be stopped and viewed, the brembo brakes are clearly missing.
There was a great scene filmed for the movie that was edited out when he drove the car out of the showroom front window.

From what I remember there were two cars at least. I don't know about the authenticity of the GT500. But in the Blu-ray extras (which I assume is on the DVD), they did a mini jump. The car broke something on the jump, so they did the jump again in the backup car.
