In the right hands your right but the average driver will be running mid to high 14's all day. I have seen stock GT owners only mustering up mid 14's at the track.

I think the bottom line is that the new V6s are more than just cars with show and no go.

I expect the 11 v-6 to run right with the outgoing GT. Same HP, less weight. Lol at any of the old 5.0s running with the new six.
By the way, the only 5.0 weighing 3050 lbs was the notch.
Let's see:
80'/90s 5.0 3200/190 rwhp stock = 16.8 lbs/HP
2011 V6 3400lbs/250 rwhp = 13.6 lbs/HP
It's just math

You are totally forgetting that it's torque that wins drag races, not hp. Old 5.0's were 300 lb ft, while the new 3.7 makes 280 lb ft. The new 3.7 weighs several hundred more pounds than a 5.0 from the 87-93 generation. So, let's review: old 5.0 has more torque and weighs less than new 3.7. It's just math.

I see a drag race playing out this way:
Old 5.0 launches hard, gets probably a car on the 3.7, shifts into second, and the 3.7 is already gaining back, eventually completing the 1/4 in a quicker time, which I'd estimate to be a few tenths minimum. Horsepower plays a big part after the initial launch.

Agreed. The V6 can be faster, but the sound can never back it up. Take my truck for example, straight 6, true duals, rumbles at idle and sounds really good, but it doesn't have that "it factor" or whatever of the 302 and 351 powered trucks exhausts. It sounds like a 6, but I really don't care, I love it all the same
