Should I go on this trip with a new mustang?

Your trip is going to be fantastic! Definitely take your Mustang, and put the clear bra on first. Have the installer cover the area behind each wheel as well as every forward-facing surface.
On Day 3, I suggest you take a look at Hwy 89 from Bear Lake to Brigham City instead of staying on the interstate highway. The drive through Logan Canyon is gorgeous and has lots of tight twisties.
