How do I find out the date my mustang was built?

I am assuming that you are asking for a 2010+ S197 (Your 2013 GT) since you are posting here. You can get the month and year from the top of the Manufactured by Ford white sticker inside your drivers side door rear panel. There is also your tire inflation info there.

I believe my car was built on May 26th, 2014. One of the last S197s to roll off the line!

On your window sticker, below where it shows total MSRP, there is a series of numbers, the last 6 are the build date.
