So I went to check out a black GT which is not the color I wanted but pickens are getting low. They have a really nice black GT track pack, comfort pkg, with brick red/cashmere int. Did anyone buy this combo? Anyone else like or dislike it?

I think it looks like great as long as you don't have a red exterior - some guys got that and it looks horrid, but I think it looks great with white, black, silver exteriors.
If it were me I'd get it if I thought that this was my last chance at 2014. Then in a couple of years if I didn't dig it anymore I'd go right to Classic Soft Trim and do her up in some custom leather. Maybe even take a shot at doing the work myself.
I wasn't in a position to pull the trigger on a '14 until about 5 weeks ago, and as you pointed out dealer inventories are getting thin in terms of color combos.
Black/Brick red was my first choice for a GT convertible. Alternates were Silver or White, again w/Brick Red. I love the classic look of a red gut, and it was very popular on 64-66 Mustangs. My back-up "compromises" were DIB or Ruby Red, both w/401A Black & Cashmere. And I wanted to keep the MSRP under $43K and work my deal from that point.
However, I couldn't find any of those choices east of the Mississippi that had a stick or didn't have electronics, Brembo, or the back-up camera.
I found plenty of convertibles with automatics in a variety of colors and interior trims, but I realized that my #1 priority was a stick, not the color. Once I got over that hurdle, I selected the Black and 401A Black/Cashmere that was on my dealer's showroom floor all along.
I'll admit that the first week or so I had some regrets about black on black, but the car is such a blast to drive, and I get so many compliments on it's striking bad-a$$ look, that I've fallen head over heels in love.
Regardless of color, I would not have been happy with an automatic.
This is the most fun I've ever had with my clothes on.

Two things kept me from getting red in my gray car - the fact I'm too OCD to worry about a color other than black interior, but maybe more than that the fact the steering wheel is red...what an odd choice by Ford.
I love the red leather. I looked for months to find a used stick shift GT vert with something other than black leather. I had black seats in a jeep and a Miata and don't know why people buy them for convertibles.
Plus you spend way most time looking at the inside of the car then the outside, why not get some color in there.
I didn't care for red/red but the white and black looked great with it.
The tan looked good with the dark blue, but the tan leather seats didn't look as nice as the premium seats with the contrasting stripe and stiching. Plus the black wheel was a let down.

When I was looking to purchase an '06-'08 mustang 2 years ago my first choice was silver with red interior - found a 2006 but it sold. Then I stumbled upon my legend lime with parchment interior and I love the combo. Back to the red interior, it's rare - you don't find many with that interior and that's what I love about it, guess that's why I dig my legend lime so much.

That's either too much or too little red for me. It just doesn't go with the rest of the black/dark charcoal of the interior to my eye. And the red steering wheel particularly 'sticks out'. That said, I think it would look quite nice with something other than black everything else... stone or some kind of tan. Or all red.
I wish Ford offered the Recaros in something other than black. Down the road, I'm planning on having them redone in a chocolate brown leather, similar to what's currently offered on the F-150 Limited.
Another Black/Red combo here too and I LOVE it... I better, I ordered it that way! 
My last 3 cars have had the red interior... I just love the pop of color, especially with the top down!
