I wonder if it might have gone faster with less rear gear.

The 1/8th mile 8.00 time is slow for going 12.37 1/4.

In the video you see the car lift taking off and then drop hard and lift again right after launch, so it looks like it is losing time there.

Probably would have gone quicker on a 26" vice a 28" slick, and perhaps a different launch technique (I would think there is more on the table than a 1.88 60 ft on a slick). However, he is planning on doing other things, and wasn't trying to optimize ETs with this combo.

I think just the opposite, with the 4.10 gear he needs a taller tire and about a 3500 stall converter, probably put the car DEEP in the 11's.

4.10s with a 26" tire may be an issue. However, the only reason to run a 28" tire is for the extra hook it can provide (Terry will be using a power adder at some point, and thus may need the extra tire). With a mostly-stock car, a 26" slick would be plenty. Because it is lighter and has less rolling resistance, a 26" tire will provide for a quicker/faster ET when properly-geared. This was the reasoning behind my comment.
