A GT500 front is too much flash for SMQ's stripped down '68 beater GT that roars theme.
But at least Bullitt was never disgraced with that bulky 10-12 loaded diaper black plastic rear end.

Question: which motor/options would you use in it?
My take-
Engine/Drivetrain:Coyote 302 with unique FRPP tune, 7200rpm redline, and air filter, Torsen 3.73 rear end, and Boss adjustable suspension with a slight drop. Brembo brakes with gloss black/highland green font calipers & Boss 302 pads, GT500/Boss 302 exhaust with FRPP X-pipe.
Interior: Recaros with crosshairs stitched in, satin finish trim, Sync, etc. Include a special "Highland green" color of the MyColor for the gauges and ambient lighting.
Exterior: spoiler delete, badgeless grille, Boss style rear diffuser, and a modern twist on the Bullitt wheels (19x9.5F, 19x10R). Instead of the pony projection puddle lamps, have the crosshair logo projected out. Hood similar to MRT Hotload/Reload package from '08-09.

Basically just a stock Coyote with the FRPP tune and air filter on it. I think 430hp is a good compromise and keeps it below the Boss 302.
Some other things I thought about:
-Brembo brakes (gloss black/Highland green writing)
-FRPP strut tower brace with VIN plate
-GT500/Boss axle-backs
So, if it really wanted to be done, I think there'd be minor development work needed to make it happen. I don't want a Boss painted green, but I think with enough parts out of various bins from current cars, they could really make one heck of a nice sendoff in '14. It's a pipe dream, but you never know what can happen.

Not possible. Others have mentioned a N/A 5.8 motor would essentially be a new motor, which would require a massive amount of work. Using an existing motor and some in-house modifications, as well as parts from higher level models, would be a cheaper, easier way to come out with this.
