I'm about to pull the trigger on the rims I want 18x9 in front and 18x10 in back. I just want to make sure on the tire sizes I was thinking of running Nitto's in front at 255/45/18 and in the rear at 285/40/18... does that sound like the right sizes to go with? I'm not worried about rotating tires.

The tires you mentioned are the stock size for the GT500 front and rear. Personally, I am going with 255/45/18 all around because I want to be able to rotate the tires. Compared to the factory 235/55/17's I had, 255's will be "good enough" for me.
I had a 2000 V6 with cobra rims (275/40/17's) and the rolling resistance was a little much (but nothing a little more power can't make up for). But, when I sold the car and put back some factory parts, and factory 245 series wheels/tires, the car seemed just as quick.
Obviously, the GT's can handle the resistance, but it is just food for thought

I, like many others, have the exact set up you first mentioned (see sig). A neat thing about them is they are nearly the same overall height as the old stock 17" w/ 235s. However, since you have a tuner, you can easily adjust your RPM (revolutions per mile) to whatever size tire you want. Personally I like the 285s, but that could be cause I'm stuck w/ them for a while, and what works for the Shelby GT500, works for me!

However looking through some posts the big 295/45/18 rear set up that some members like Hatchman and MTAS run look so sweet and old school... Well I got a few more days to think about it

If my car wasn't a highway cruiser, I would maybe care less about rotations. But, since it is only highway, rotations mean a big deal to me. To pay $1000 for tires and get "half the life" of normal is just not worth it. Or, to pay $1000 for tires and get "twice the life" is great. Just my opinion.
But, I admit that 285's do look sweet on the back.

Yeah, that's how I look at it. I got 18X9s and plan on doing 275/40s all the way around. Plus I like to whip out the occasional donut in deserted parking lots for kicks, so rotating tires really helps my lifespan!
