Tire Size

It's still pretty big; the 17" tires already have a big sidewall. I'd go with a 255/35/17

255/35-17 would be a very short tire... if you could even find one that size. It would only be 24" dia... which is more than 3" shorter than stock. Yikes.
Choosing the profile of a tire depends on what you want the tires to do for you. I like lotsa sidewall for a couple reason: (1) more traction, and (2) more old school muscle car look. I have 275/50s in the rear and 255/50 up front.

On an 8" wide rim?
Fritz has it correct, 255/50/17s to be safe.
Largest recommended for 8" and bonus, near stock diameter

Don... man... your pics make me wish I stagered my tire sizes. I really love how the larger diameter 275s fill the rear wheel well.
Edit: What's the widest for a 9" rim? 285s?
