Ok well lets do power first. Start off by freein up the breathing. Get a solid intake (maybe airaid or steeda) and new headers/midpipes/axle-back exhaust. Thts what i would do.
Oh and get a set of lowering springs plus new shocks/struts.
That alone combined with a solid tune and you wont be too far away from a gt500(:

Ummm WHAT?
A CAI and headers will not put you anywhere NEAR a GT500.... not even in the ballpark.
A CAI and tune will likely net around 30-40hp with headers maybe another 30 at most?
So that puts you at 360?
How is that close to 500?
For the OP IMO I wouldn't do a Shelby theme... unless that's what you really want to do.
Do what you think looks best, but for me I really like it when guys do their own thing on their car and make it unique.
The GT50 bodykit has been done a lot... not that it looks bad, but it will never be a Shelby, no matter what stripes, bumpers, wings, etc. etc. you put on it.
Don't get me wrong, I'm not one of the Shelby faithful that would pay $100 for a $20 part because it had "Shelby" stamped on it, I just don't get why guys put snakes and Shelby crap on their cars when the car isn't a Shelby.
I think R3troGT did an awesome job with his car... and it's unique to HIM

Here's a shot of my car and it's the same color as yours and his:
