Opinions wanted on potential wheel/tire choice

First, thanks to everyone here for all the valuable info so far. :worship:
After spending considerable time with tire size calculators/ Tire Rack / Discount Tire, etc. I think I have decided on a wheel tire combo for my (soon to be acquired) 05 GT.
TSW 19 X 9.5 (offset 35) Thruxton's with BFG KDW2 275/35ZR19's ("NT" tread pattern) all the way around. This will be combined with Eibach Prokit springs.
I like the idea of easy tire rotation and keeping the balance of the car similar to stock.
I've never owned BFG's, but I hear really good things from a lot of people and I love the wicked tread pattern. The tire would be 26.57" tall compared to 27.17" stock. Close enough I would think. (???)
I searched a lot and read a huge number of threads including the "275's all around" thread but it went way OT.
So, thanks in advance for any opinions/answers to my many questions.
Thruxton's are also available in 19 X 8 (offset 40). Would it be better to stagger front and rear wheels/tires? Like 255/40/19's on 19 X 8 front, 285/35/19's on 19 X 9.5 rear? (I'd have to go with another tire as the BFG's in 255/40 don't come in the NT tread)
Anyone see a problem with the orginal combo above? Will 275's in front with the Eibachs cause a problem? Is the .6" smaller diameter an issue? Are the offsets ok on the TSW's? If I go with 275's all around, should I go with another manufacturer that makes a 275/40/19? (overall diameter of 27.66")

I wasn't really thinking about posting a link to the wheel as I'm already sold on the looks. I was really hoping someone would be able to tell me whether the 275/35's all around would be a good idea or not.

The only thing is finding 19 inch tires, say if you get a flat in BFE. You might have a hard time getting some tires. You'll probably spend more on those tires than you would on 20's. Especially with how popular 20's are now. This is what I heard at the tire shop by me. I didn't want 20's, too big. So I was gonna get 19's and he talked me out of it. Just something to think about. Rims look sick by the way.
