Black on the White, baby!
I've painted the calipers on several cars, but I have had the best luck with the brush on as opposed to the spray. The brush on type comes in an epoxy form with a part A and part B, so when you mix them it later hardens to an almost ceramic coating. It is extremely durable and holds up well, especially if you follow the directions and put on a solid 2 or even 3 coats.
I have always used jack stands so I could do all 4 wheels at once, but for some that isn't feasible. Also, I let the car sit for 48 hours after applying to ensure it is set before driving. The extreme heat produced by the calipers can cause issues, so I felt it was better to wait than to risk it.
As far as color - I have always used red because it seems to "pop" more than other colors. More subtle colors just don't catch your eye, but I got several comments about my red calipers....I think people thought they were aftermarket brakes.
