Get a new clutch. The stocker sucks.

You get used to it. Your foot with a cable clutch will 'know' based on the spring tension where the engagement point is. You just learn it by practice with the hydraulic unit. My brother has a Bullitt and still struggles a bit when he drives it here and there, when I drive his car I can't believe I used to drive SN95's every day...Even the V6 S197 feels like a truck's clutch pedal.

The hydraulic clutch on the S197s feel very vague with a lot of travel involved in using the pedal.

Clutch

I've been driving a stick for like 45 years, I have no complaints with the hydro clutch. Just my $.02.

My dad drove stick since he started driving and he even complained about the hydraulic clutch on the GT. He said it felt like he had to release the clutch quite a bit to get to the friction point, whereas with the cable clutches it was much more reactive/positive.

I don't have any issues with it and find it easy to engage it maybe 50rpms over idle on slow starts with not reving up to get it to go. Very smooth.

No complaints either. Feel is very good and engagement very predictable (once you understand it). A lot better action than a cable. As with all diaphram clutches, engagement and disengagement is non-linear, and you have to mash the pedal to the floor to ensure complete disengagement. Hyd clutches are not adjustable and automatically compensate for disk wear (as do cable)
