It all depends on whether or not the alignment shop can get the car within specs or not. A good rule of thumb is under 1", you usually don't need them, over 1" it is a good idea. But it all depends on the car and the alignment.
Camber kits are always a good idea, but if you want to try and save the money, get it aligned first to see if you need it or not. The worst thing that can happen is the edge of your tires gets worn.

another thing you really ought to consider is new aluminum rack bushings because lowering your car is also going to throw off the geometry of your steering and cause bump steer. Saleen has had those available with their previous kits, you should call and find out if they have them for the '05 yet. they use eibach springs, so you might just look to them for the whole enchalada. I'm sure other companies have them as well.
