animal bone marrow and cartilage

They boil it to make the gelatin that make them gummy. I still eat them though, but its a little weird.

oh yea!
i went to about 7 different mexican restaurant in napa, and they all had really bad tacos.
i went to a taco truck my wife had heard about in the middle of a dark, unlight street.
they only sell one kind of tacos (steamed beef head tacos) and they were amazing!
i want some more.
