Here is an explanation I read on the web
Canuck," as you presumably already know, is a colloquial term used to refer to anyone from Canada, or sometimes specifically French-Canadians. (If you're Pat Buchanan, it refers to someone from Soviet Canuckistan.)
In certain situations it's considered an offensive term, but usually it's used in good fun. The American equivalent might be something like "Yankee." They both sound pretty rude when you say "Go home, you stupid ____" yet they're both something you would happily name a sports team.
The origins of "Canuck" are quite obscure. It's probably related to "Canada," with which it shares its first three letters. That may, in fact, be the end of the explanation — it's just a short form of the word "Canadian." But there are other theories:
It evolved from the mispronounced French phrase "quelle canule."
It comes from "connaught," a nickname given to Irish Canadians by French Canadians in the 1800s.
It's a combination of "Canadian" and "inuk," the Inuit word for "man."
It comes from the Iroquoian "canuchsa," someone who lives in a "kanata" (village).
And perhaps the strangest explanation of all, but one which gets considerable support from researchers:
It comes from the Hawaiian "kanaka," meaning "man," and landed in Canada when Pacific Islanders and French Canadians mingled in the fur trade.
