winter wheel & tire ?
I have a 07 GT with the upgraded 18" wheels and I want to pick up a set of the OEM 17" wheels and mount some snow tires on it, but what do I do about the tire inflation sensors and will going down to the 17s throw off my speedo?

Deal with the light on the dash for the winter. Unless you can by the replacement bands from ford at a decent price.
Speedo wont be affected if you go with the stock 17" size 235/55/17
