Regular Gt or V-6 vert
I think with 210 bhp in the Mustang V6 you will have plenty of power. Top end is 120 mph. Where are you going to drive at 120 mph except at a race track? The GT is 300 bhp and the top end is 165, there again were are you going to drive the GT other than at the race track. The only thing that the V6 does not have (other than an extra 90 horsepower) compared to the GT is red and black leather seats and the wider front end and extra headlights of the GT. I think most Mustang buyers will be getting the V6.

I would wait until the verts come out. Drive the V6 vert and see if it is fast enough for you (which it might not be). If it is, I say go for that. If you fall into some cash later, you can always put a blower or even swap engines (e.g. to the new Cobra motor when it comes out!).
It all depends on where you get your fun when driving and how you use your car. Open air cruising, hardly ever hitting the redline? Get the vert. If you push the car and are looking for performance--get the GT coupe.
