So the '07 Mustang GT offers the Premium Trim Package - Soft-Touch Instrument Panel, Console, and Arm Rest Covers, and Aluminum Pedals.

Two questions:

1) Does the "Soft-Touch Instrument Panel" mean the leather trim that's offered in the Shelby, or is it something altogether new?

2) Does the Premium Trim Package come with the aluminum IUP, or only the Dark IUP?

1) Don't know...look at a sales brochure or talk to a salesperson about the 07 package (I have an 05 GT Premium)
2) IUP is an additional option on top of the trim leval you want. I would think that you can choose which one you want on your car.
