Is it true that the only way to get a leather wrapped steering wheel on the 05 GT is by ordering the premium dash package with the instrument cluster that can change color?

NO, There's also an Interior Sport Appearance package that includes the Upgraded wheel.

It also comes with the 18r package which is the wheel & Shifter upgrade!

No, there is another package that includes the leather wrapped steering wheel. It is the Interior Sport Appearance Package, and also has the aluminum spokes on the steering wheel, as weall as a satin aluminum-plated shifter lever with automatic transmission or leather-wrapped sport shift **** with manual transmission.
