I’ve been quoted $1,250 for parts and labor installing a Steeda UDP and FRPP 3.73 gears. I live in Kuwait, so bear in mind that these items were shipped all the way here form the US. Also good mechanics are harder to come by here. I was lucky to find a British mechanic (Mad Tony) who has plenty experience with Mustangs. Is this a good deal? Am I paying too much over here? How much would this cost stateside?

Hehehe, actually I think the labor here is pretty cheap. I think I'm paying a lot in shipping and customs to get the product here. But yes, your point on the fuel cost is spot on. Not to gloat, but I buy a gallon of 95 octane for $0.49 (the 87oct costs $0.35/gallon).
