Anyone know why certain interior colors are not available with certain exteriors?

Only dark charcoal and parchment inside a Legend Lime, Only dark charcoal in a Screaming Yellow, etc.

While Ford may think certain colors don't look good together, I doubt they'd restrict combinations based on such criteria. Though it's possible.

So, is there some technical reason with how the assembly line puts things together and allocation of resources, etc?

1 part common sense, and 1 part logic.

Ford is not the only car company that restricts combos... most of them do.

That's not exactly useful. Obviously I know they restrict.

I don't want guesses. I'd like an informed view (dealer or someone who is familiar with the process).

I'm curious what makes them restrict certain combinations. There does not seem to be a technical reason for such restrictions, and some restricted combinations (dark charcoal in yellow ok, light graphite not) seem arbitrary.

Also remember Ford runs 'Lots' or 'Runs' of colors so having 'all' colors of interiors is not necessarily feasable. They would have to stock every color interior equally and that would be a waste of money and resources. Research and interior designers tell them which exterior colors/interior colors have the highest potential of being ordered/sold. If they see a run in a certain area well then the go for it. Look at the IUP fiasco of last year......
