Can the performance shop load different tune settings like stock,performance and race tunes? Or is it just a one setting type thing from the performance shop?

Yeah they can as long as you get the x3 or better. They may charge you extra though.

Cams and intake turned out great. I believe the tuner just locks on to your vehicle so you can't use it on multiple vehicles. It can be reprogrammed any time.
