Question

Could I take my entire exhaust system off and jus have long tube headers?

Yup. But it won't sound very good. And you gotta have some kind of pipe to get the exhaust away from the vehicle. Whether you dump it by the doors or send it out the back but you gotta do something. Or else exhaust gas will enter the cabin and nighty night

It's also gonna cost you bottom end torque. Don't do it. Play by the exhaust rules with cats and such.
