Gas-A-Just vs GR2
Depends on what you want to do with the car. Personally, I have Gas-a-justs, and when I replace them, I'll likely go with GR2s or something similar. When I was rebuilding my suspension, everything was so sloppy that I was heck-bent on firming things up. Boy did I. Heavy duty springs, polyurethane and the G-a-j's have left me with a crisp handling car that kicks the crap out of me. Don't get me wrong, it's fun, but when I compare the amount of open track time the car has gotten (so far, none) to the number of times I thought I'd lose a filling going over RR tracks or into a pot hole (too many to count) I realize the error in my ways.
Whenever I get around to re-doing some of the suspension, I will be going for the more "Euro" philosophy: softer suspension that allows the components to do their job, after all, those moving parts are supposed to move. Bob has some excellent info on his page http://www.gt350clone.com/
BTW, I would strongly advise against 720# springs. I have 620s and they are harsh.

i have the 720's on my car and i don't feel they are harsh at all, but i also have a much heavier car then Blake does. i have a 69 gt coupe with 351, auto, ps and ac. when i get the car back from the body shop it will get a set of 5-leaf rear springs along with a complete front end rebuild again. i will be keeping the 720's and replacing the monroe-matics it currently has with G-A-J's up front and GR-2's out back, it will also get a 1" front sway bar and 3/4" rear bar at that as well as the shelby drop too. with the current setup the car is firm but not harsh and is actually very compliant over bumps and such, much better ride than my 93 jeep cherokee, we'll see after the next rebuild how i will like the G-A-J's up front, if they are too harsh i will either get some GR-2's or go back to a cheaper parts store shock like a gabriel red-rider or monroe matic plus shock.
I replaced the stock rear springs and used GR2's on all 4 corners of my 65 coupe, but found them to be too soft. I have since swapped in a set of Gas-a-just's and love them.
I'll try to GR2's in my 68 this spring and see how they work there.
I've never tried any of the fancier ($$) shocks, so I can't comment on those.

I have GAJs, and they are plenty stiff. If I spent more time on the street I would definitely try the GR-2s.
My next shocks will be the Edelbrocks.

probably
I run 620's with a half of a coil cut off and the negative wedge kit and 5 leaf mid eyes with a 1 inch blockin mine with Gas adjusts and Ilove the set up. Its a nice blend of stiffness with some suspension movement.
