GT500 should come at that height from factory.

How's the handling? ... Significant improvement? I'm deciding whether to buy the handling pack or the Shelby/Kicker system for my GT...

It's very nice, not too harsh. The struts/shocks are adjustable, so you can decide where you like it. I have mine turned all the way up and the ride is still pretty nice. It's definitely an improvement, but the 500 suspension was pretty good to start with.
