I had a local dealer tell me that they were still building them. I thought production on the '10 ended a couple of months ago.

Nothing bothers me more when it comes to buying a car than a sales person that doesn't know a lot about the car they are selling.
When buying a car in '04 one sales guy here in Virginia told me they didn't make that car in the color I wanted. Even after I had seen the option on Pontiac's site. He was obviously just trying to sell me my 2nd preferred color that he had on the lot.
I ended up flying to Michigan to deal with a dealer that said I could have whatever options/colors I wanted.
The guy wants me to buy a 2009 GT for $20K rather than wait for the 2011 V6. I guess he is willing to tell me anything to make a sale.

And also deal with a dealer that isn't old school and knows his product. If you are interested in a '11 V6, you can have one ordered for you. There is at least 1 dealer that posts here often that will give you a good deal and have it shipped wherever you want at no extra cost.

The one I went with didn't know anything at first, but within hours he called me back with all the order info and told me that the 2011s were already in production. I mean I already knew all that, but let me tell you it was good to be able to tell the ones trying to be sly from the ones that are up front and honest. A different dealer the same day told me pricing wasn't available on a 2011 and did his very best to sweep the idea of getting a 2011 under a rug to get rid of their inventory of 2010s.
Still, a 2009 GT is a valid option, but don't let that dealer pressure you into it. Know what you want, and if they can't get it, well, there are plenty of dealers left in the sea.

The first dealer I spoke with (local dealer) one of the first things out of his mouth was "If you like this car, I suggest waiting a few months when the 5.0 inventory comes in". I knew right then this guy wasn't trying to sell me something I didn't want. So i stayed there for a while just BS'n about the car, options, etc.

Another stupid dealer I remember is when I was looking for a car and was actually considering an Altima 3.5 (Don't ask why...I don't know either). After leaving the Nissan dealer I went to the Mitisubishi dealer to see what they had. I forgot what car I was looking at but the sales guys asks me "What other cars you looking at?". I said the Altima and he responds: "Yea..those are nice. If I were you i'd buy the Nissan".

They have been building 2011's since Mid-March. 2010 production was likely over sometime in February. Im sure Stinger could get the exact date if it matters.
If you want a 2010 you can likely get a decently equipped GT Premium for it about $8,250 Off if you get a $750 Brochure Rebate. The Rebates will total $3250 and the dealer is getting some very hefty Dealer Incentives (Silent Rebates).
A 2011 you are probably looking about $4,000 Off ($300 Under Invoice + $500 Bonus Cash + $750 Brochure Coupon).
When you figure the $1250 difference in MSRP you are looking roughly $5,350 Difference. Just depends if you want 315 bhp or 412 bhp.

2010 orders were no longer taken way back in 2009. I know this because I tried to order one 12/28/09 and Ford denied the order saying they were no longer taking them in prep of shutting down to start on 2011s. This is how I am now sharing a car till my 2011 comes in.

Actually I want the 2011 V6 deluxe with automatic, 101A and the red candy paint. I'm hoping to get it at invoice which is $23,395 including D&D, less the $500 bonus cash + $750 (I ordered the brochure on Tuesday)

I just had the dealer confirm I could get 0% for 36 months + $500 Bonus Cash + $750 Private Cash (Brochure Rebate).
On the 2011 their are two low interest programs. One is 1% higher than the other 48-72 and allows the use of the $500 Bonus Cash. The really interesting thing is on 36 months they both are 0%. So if your going for 0% for 36 months just make sure the dealer uses the program that can be combined with the $500 Bonus Cash. I believe thats Program 2040 which currently expires 6/01/10 but it will likely be extended when we get close to the date.
