Does the backlighting on the tach turn red when the car hits the redline? I only have about 500 miles on my 2011 GT and I haven't hit the redline yet. I've seen conflicting you tube video.
The gauges do indeed turn red..... I believe it happens all the time since the dash is always lit up, but it's more noticeable at night of course. But basically if you wait until that happens, you are damned close to hitting the limiter in lower gears like 1st and 2nd (and even more so with 3.73's than with 3.55 which are worse for that than 3.31's).
You should go through the full range at some point in the breakin, only thing you don't want to do during break in is stay at a constant rpm for a long time, like using cruise control and such. Not saying you rev it all the way up every time, just saying you should give it 100% a couple times during break in.

I've had it a month and the highest I've been is 5,000 RPM. Guess I'm babying it too much, but with the clogged roads around here, red line isn't really an option very often. Yesterday, when the light turned green on a four-lane road I drive to and from work, I noticed the entire road was wide open in front of me for about 1/4 of a mile, so I gunned it. I hit 5,000 RPM in 3rd gear at around 50 MPH, but then I chickened out and shifted to 4th.
Keep in mind most "break-in" requirements set by the manafacturer are there to let you get acquainted with the car so you don't wrap it around a telephone pole. In Europe there is no break-in requirement for the 911, yet here in the US they issue a 2200 mile break in.
In my opinion, the best mechanical music and strongest pull produced by the 5.0 occurs between 6000 and 7000 rpm (even with the stock exhaust, which I have for a few more days), so if you've never taken it past 6000 rpm you're missing out on something you paid good money for.
