Offset change with wider rim?

I am looking at getting some wider then stock deep-dish 18x8.5 rims. My question is, I am suppose to get less offset (35mm) more offset (55mm) or the same (45mm) if I do not want the tires to stick out? Does the fact that they are deep-dish make a difference or are they all measured the same?

All the offsets on wider wheels seem to be higher. I broke down an order custom wheels with a custom offset.

If the stock wheel is 8" wide and has a 45mm offset it will be roughly 2.73" from the mounting face of the wheel to the outer lip. 8.5" rim with the same offset should be @2.98", only a .25" difference.
