I am still looking for wheels for my 2005 Mustang GT. I love the Panther Valera's, however I need help on what size tires will look the best if I decide on 20" x 8.5". And how much do I need to lower the car?

Well most likely you want to keep the stock overall tire diameter. 255/35/20
as for lowering 1.5-2" would be pretty good.

SSE's car had the H&R springs if I remember correctly. And those are 1.5"/1.9" fr/rr. I certainly would not go any lower.

Really, any of the springs should work well (except maybe Steedas) as long as you have a good sidewall and no 30 series tires.
