One picture is a polished wheel and the other is chrome. I know what chrome looks like but would the polished be about the same as the rim on the stock bullitt?

The polished aluminum rim would almost be as shiny as the chrome rim. If the solid aluminum, polished rim was scuffed it could be buffed out. The chrome-plated rim would flake if it were scuffed.

The outer lip of a standard bullit rim is polished. Picture the whole wheel looking like the lip. It'll probably be polished a little more (more shiny), but it still won't have the same mirror look as chrome. You can see your reflection in chrome, you won't see your reflection in the polished one.

I had a chance to see the polished Bullitts at a Ford dealer. I was disappointed, they are kind of dull.
