Looking at the dark stainless AMR wheels and curious if this would cause any issues.

Any time you change up and run different tire sizes front and rear it will always effect handling. My cars run a 9" up front and a 10" on the rear and my other car runs a 4.5" up front and a 12" on the rear.

No issues, just stay with a similar overall tire height.
With a 20x8.5 wheel you're gonna want a 255/35/20 front tire.
For the rears you can run anything from a 275/35/20, 285/30/20, 285/35/20 or even a 295/35/20 or what i run, 305/35/20 but that will bubble out a bit and depending on the wheel offset you might rub

What if I went 19x8.5 - 19x10 staggered..... My main concern is the sidewalls looking even and no running in front. I've thought about going 19's squared up but I dunno how a 10" wide tire up front would rub.

I had 19x10's on the front of my car last year, the AMR wheels from American Muscle, with 48mm offset I believe. Tires were 275/40/19.
Perfect fitment, lots of room front and back, no rubbing.

Any handling sacrifices with a 10" front wheel?

None that I noticed.
The 275/40/19 tire fit perfectly on there, perfect square, just the tiniest of stretch, perfect for a front fitment, and certainly more than fine for rear.

This was the 19x10 front wheel set-up with that tire size on my car:

I dunno if I wanna lower it and do it right first, or get wheels/tires. Right now I'm stock bullitt style 17's with uniroyal tigerpaws and they're brand new.

When I lower it I'll likely get the SR springs, GT500 mounts or c&c plates and Koni shocks/struts. But that's gonna be a big pay day for American muscle and I'm hesitant to shell out that much cash right now.

Heck, I'm even considering a staggered package in 18's cuz it's such a great price

I went with 20" staggered and the price from AM was great, take a look. I can't decide whether to paint the front calipers red or the rear ones black. So far no issues with steering or handling but a great improvement in traction and cornering.
