Why is it that the new production Shelby has those narrow tread wheels? Mine is 18x11 (i think).

That's cheap...skinny wheels....

Could you imagine the Z06 with bicycle wheels? Then why a mustang with unicycle (18x9) wheels.

Well for a production car, considering cost, they are pretty standard sized wheels. Also keep in mind the 03-04 Cobras only had 17 x 9 inch wheels.

For 2006 (according to Fastautos.net for the Corvettes, and Car and Driver for the Mustang):

-SC GT500 (est. $39,000) has 18 x 9.5 at the front and rear

-C6 has ($43,500) 18.0 x 8.5 inches at the front and 19.0 x 10.0 inches at the rear

-Z06 ($65,800) has 18 x 9.5-inch front wheels and 19 x 12-inch rear wheels at the rear

If that isn't enough, you can always go aftermarket.
