Since Ford seems to underrate the Mustang V8 engines - and as I had heard it's actually more than 300 horses - has anyone looked into this? Not at the wheels, but at the engine. I thought I read somewhere it was closer to 315 or 320 horse.

Dyno Thread

Check that thread out.
It has a lot of modded cars, but also stock dyno's as well.

Stock seems around:
(And this depends on many variables from location to weather conditions and tranny type)

272RWHP/ 292RWTQ
261/284
277/282
272/288
266/280
273/296
265/286

Anywhere from 300 - 320 it seems.
I think some were even lower, but I'm assuming that weather/humidity had a huge factor in those numbers being so low.

I haven't updated it since December, but I was tracking various stock RWHP #s

Name rwhp rwtq, dyno, trans, stock?
1st Stang 272 288 Dynojet Manual Stock
dallasw77 270 ? Manual Stock
DaTT(1sK) 273 296 Dynojet Manual Stock
HTownStang 269 Dynojet Stock
TheMustangSource 266 280 Dynojet Manual Stock

So if you assume dynojet is 15% drag for a manual then, based on this small sampling, you're looking at 313 to 321 at the crank, or an avg of 317.6.

Depends on the type of dyno too. I've never had my car on a Dynojet, but only on a Mustang Dyno. Bone stock with only the HC trap removed she dyno'd at 258RWHP, which is about 303hp at the flywheel if you figure 15% drivetrain loss. With a JLT CAI, Predator 93 octane tune she hit 283RWHP (but also had 4.10 gears which skew the readings).
