Are you set on the 13? New body should be coming soon enough. Might want to keep saving to see what that new body looks like.

The best time I've had with my car was to take it on a construction site side road, away from public. I stop turn all electronic goodies off like traction control etc. And I rev it up and put it to the floor and shifting the gears as my car goes from side to side all the way down the road 1-2,Bam2-3 bam. I felt like I was drifting on ice. That there made me smile ( Tires yelling) :-)

I know you like the 13 body style but there's some great deals on 11-12 GTs right now because of the season.
Also, ever consider a cherry 03-04 Cobra? You can save a few coins too.

As far as getting a good deal, I agree with what some other people have said above, I'd look for an '11 or '12 before I bought a bare bones '13. You should be able to find a basically "new" 2011 or 2012 car with low miles and still under warranty for a significant savings over the price of a brand new 2013. Also, I can totally understand what you're saying about just wanting that V8 muscle above all else, but I'd advice you not to get a totally bare bones car whatever you decide to do. At least get leather interior. Especially if you're looking at a gently used car it's not going to cost you all that much more and you'll be glad you did in the long run probably.
Plus, I can personally attest from my experience in used car sales that cloth guts GT's are impossible to sell, regardless of how nice they are otherwise, so in the long-long run getting a car with some options will help you out big time in the resale department.

When I ordered my 2013 I, of course, had already heard there was a new model coming out in a couple of years, all-indepentednt suspension, new/smaller car, lighter, to be exported to Europe ... all that riff-raff ... and it all made me want a 5.0/solid-rear-axle/6-speed/current model even more ... lol
I love my Mustang and am so happy to have a car with an almost bulletproof driveline including that tried-and-true rear axle that so many car magazines complain about.
