Hello and Welcome!
Two of my '86 Capris were two-tone, silver/dark grey and maroon/dark grey. The last one was the maroon/dark grey. I was going to select a little lighter maroon off of a F150 at the time (~7-8 years ago) and keep the darker grey. The two-tone Capri's had darker grey on the bottom half as compared to the 87+ Mustang GTs if memory serves.
Anyway . . . I like the two-tone look on 87+ GTs, but I also like the all white ones as well.
Are you guys wanting to keep some color scheme or shoot for something completely different?
