Who's a Chef in this joint?

December is vacation time so I dust off the apron and I do some gourmet cusine.

I have a handful of plate cleaning specialties:

- American: Salisbury Steak, whole carrots, mash potato/gravy, biscuits, tomato-cucumber-onion salad

- Italian: Killer meat sause, pasta, lettuce(s) salad, white mountain bread

- Spanish: Seasoned shredded beef, white rice, fried plantains

- Lunch: Stir-fried rosemary sundried tomato ham/spanish sausages squeezes on melted swiss cheese and fresh baked french bread

- Weekend: Take out pizza

I am contemplating hiring a consulting firm headed by Richard Henne to consider the possibilites of a hit reality show. Any inspirational and motivating comments would be greatly appreciated.

I am not a chef. Though I do enjoy food. My waistline can attest to this.

Most of my favorite dishes are a result of my location. Everything seems to be based on the chili pepper and jalapeno pepper.

Mexican spaghetti (or Chili spaghetti as some call) it is a family tradition

Spicy chicken tacos

Beef fajitas

Shrimp prepared in every possible manner (fried, sauteed, boiled, broiled...)

All manners of blackened fish

I guess it can best be described as Gulf Coast Tex-Mex.

My memories of Salisbury Steak come from what I believe was Salisbury Steak Tuesday in elementary school. Certainly not made by a chef, and probably neither Salisbury, nor steak for that matter.


I wonder if it is similar to what we make called 'Smothered Steak'. Essentially a thick soup of onions and cream of mushroom gravy that the steak cooks in until the meat is so tender it falls apart and is absorbed into tongue.

I've always known it to be basically a hamburg patty soaked in some sort of gravy. I like the frozen food section versions once in a while, but i'm sure a homemade one would be oh so much better! Smashed potatoes too and bread fresh out of the oven! Mmmmmmm

Home made cornbread sage dressing. Takes me 2 days, if done correctly, and is also decadent money wise too. But worth it, people love it.

Ambrosia. Well, that's what the woman who gave me the recipe called it. It's worthy of the name. Cake, pineapple, cherry, strawberry, whip cream, nuts, bananas and pudding, not in that order, but just think about it... OMG, want.

Taco Dip. I have to make a lot if I bring it, the vultures.

Magic Bullet. A shake/smoothie thing I figured out how to make to take the place of fiber tablets and vitamin pills. Not for general use for anyone, but it's **** good, and I'm good at them. That it calms my tummy and gives me my nutrients, and is overall healthy and calorie good on top of it all... win. Thank goodness I figured that out.

McDonalds , Burger King , Wendy's , you know HATE THEM ALL my son & I like to watch the food networh and go from there, we both can cook better than his mom ? go figure I like to make a standing rib roast , it always comes out perfect the way my mom showed me and there is hardley left overs.

Yes! My wife and I make our own Pizza, sometimes we use pie crust and it is yummy! We also do mainly white pizza's much healthier that the real thick stuff..

as the Grizwalds transport whatever across country ? be kinda hard, now maybe granny Clampet could pull it off with a Palsom stew perhaps. lol

My wife does. She has a bread maker and she makes the dough. Calzones come out pretty good too.

She's a pretty good cook, just not to my gourmet chef status...

... I think, I just got a gourmet headache.
