bbq is the best food ever! my favorites are babyback or spare ribs...mmmmmmmmmmmmm.....and pulled pork....btw, beer ain't that good, iv'e had a sip b4 and it tastes like poo...eeeew!

Around here bbq mean a pig being cooked on an open pit with wood chips. My friends grandfather has a BBQ every Labor Day & Memorial Day weekend(anywahere between 100-200 people). The sit out for like 8-10 hours around the pit shoveling burning wood chips under the pig. And when they flip it they add a homemade sauce to the top & salt water. Then they keep cooking & shoveling for another 4-5 hours.
At the same time they use the other side of the pit to slow cook corn & potatos (spicey & not so spicey versions)& beans. All the while cooking chicken, ribs, hamburgers, hotdogs, & polish sasuage on the grills. Sometimes they mix it up & cook stew or soup.
Now the women, make the sauce, carry out deserts & side dishes, cultrly, buns, etc. They also do the dishes, the situp, the clean up & the fetching.
And in between we all sit around & talk, play cards, ride 4-wheelers, go-carts, or dune buggies (AKA: Rails), & just have fun.
Anyway. That's what BBQ is around these here parts

RECIPES from your favorites:
Arby's Barbecue Sauce
1 cup ketchup
2 teaspoons water
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon pepper
1/4 teaspoon salt
1/2 teaspoon Tabasco pepper sauce
1. Combine all the ingredients in a small saucepan and cook over medium
heat, stirring constantly, until the sauce begins to boil,
5 to 10 minutes.
2. Remove the sauce from the heat. Cover and allow to cool.
3. Pour into a covered container for storage in your refrigerator.
Keeps for a month or two.
Makes 1 cup.

BB King's BBQ Ribs
2 Pounds Pork Loin Ribs
Dry Spice Rub (recipe follows)
4 cups canned tomato sauce
1/2 cup diced tomato
1/4 cup firmly packed brown sugar
1/4 tablespoon Worcestershire sauce
2 tablespoons dried onion
1/4 cup soy sauce
1/4 cup water
Coleslaw and grilled corn on the cob as
accompaniments
Rub ribs well with some of the Dry Spice Rub and refrigerate,
covered, for 4 to 6 hours.
In a saucepan combine tomato sauce, tomato, sugar,
Worcestershire sauce, onion, soy sauce, water, and 1/2 cup
Dry Spice Rub and cook over very low heat for 3 hours.
Preheat a grill or smoker over low heat until hot. Add ribs and
cook, covered, for 3 to 5 hours. Brush with sauce during last
minutes of cooking. Serve with remaining sauce, coleslaw, and
corn.
(Dry Spice Rub)
1 cup chili powder
1 tablespoon garlic granules
1 teaspoon onion powder
1/2 teaspoon cumin
1 1/2 teaspoons salt
2 tablespoons seasoned salt
In a jar combine all ingredients well and store in a dry place,
covered, until ready to use.

Ponderosa's Steak Sauce
1/3 Cup Heinz 57 Sauce
1/3 Cup Worcestershire Sauce
1/3 Cup A-1 Steak Sauce
2 Tbls. Light corn syrup
Combine as listed and funnel into bottle with tight fitting cap.
Keep refrigerated to use in a few months. Shake well before using.

T.G.I. Friday's Jack Daniels Grill Glaze
1 head of garlic
1 tablespoon olive oil
2/3 cup water
1 cup pineapple juice
1/4 cup teriyaki sauce
1 tablespoon soy sauce
1 1/3 cups dark brown sugar
3 tablespoons lemon juice
3 tablespoons minced white onion
1 tablespoon Jack Daniels Whiskey
1 tablespoon crushed pineapple
1/4 teaspoon cayenne pepper
1. Cut about 1/2-inch off of top of garlic. Cut the roots so that the
garlic will sit flat. Remove the papery skin from the garlic, but
leave enough so that the cloves stay together. Put garlic into a
small casserole dish or baking pan, drizzle olive oil over it, and
cover with a lid or foil. Bake in a preheated 325° oven for 1 hour.
Remove garlic and let it cool until you can handle it.
2. Combine water, pineapple juice, teriyaki sauce, soy sauce, and
brown sugar in a medium saucepan over medium/high heat.
Stir occasionally until mixture boils then reduce heat until mixture
is just simmering.
3. Squeeze the sides of the head of garlic until the pasty roasted garlic
is squeezed out. Discard remaining skin and whisk to combine.
4. Add remaining ingredients to the pan and stir.
5. Let mixture simmer for 40-50 minutes or until sauce has reduced by
about 1/2 and is thick and syrupy. Make sure it doesn't boil over.
Makes 1 cup of glaze.

Tony Roma's Baby Back Ribs
Combine:
1 cup ketchup
1 cup vinegar
1/2 cup dark corn syrup
2 teaspoons sugar
1/2 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon tabasco pepper sauce
Heat over high heat until boiling.
Reduce heat, simmer 30-40 minutes until thick.
Coat 4 pounds of baby back pork ribs, front and back, with BBQ sauce.
Wrap ribs in aluminum foil. Bake at 300 degrees for 2 - 2 1/2 hours.
Remove ribs from foil and smother with more sauce.
Grill on hot barbecue for 2-4 minutes per side.

1 1/4 cups Cider vinegar
1 tsp. black pepper
2 1/2 tsp. salt
1 1/2 tsp. sugar
4 tsp. chili powder
1 tsp. dry mustard

Combine all ingredients and cook for 5-10
minutes to dissolve spices. Use as a marinade
and basting with your favorite BBQ recipe.

grilled ribs last night, here's my recipie.
Rub the ribs with any kind of mustard you like, sprinkle with paprika, then rub brown sugar all over. Wrap in foil and let sit over night.
Then, grill them with indirect heat. Serve with Dreamland sauce to dip (the sweetness of the brown sugar and the somewhat sour dreamland sauce complement each other very well).
