Sensitive Gas Pedal

Hi guys, I just bought an 2006, V-6 5sp. manual.
The gas petal is real touchy, I'am having trouble taking off smoothly from a dead stop.
Is the 06 drive by wire ? And is it adjustable ?

Yes, all the S197 Mustangs are drive-by-wire. Ford programmed some particular behaviors in these cars that can make manual transmission launching a little weird. It takes some time to get a feel for it.

It is one of the first things the aftermarket tuners address.

try the pedal calibration-
turn key on, dont start.
wait for airbag light to turn off.
smoothly press pedal to floor.
smoothly release pedal.
turn key off.
wait 15 seconds.

start it up, see if any better, if not-
maybe throttle body needs cleaned
maybe its running a tune already- when I put the tuner on my 06 gt, the biggest change was the pretty abrupt throttle opening
