Do convertibles need a true roll bar to compete if other mods have been done to the car? ie...suspension, intake, brakes?
I have been interested in looking into solo and possible track events.

For SCCA, no roll bar needed, and you can race top down. For road courses, a 4 pt roll bar is need and top up. For Drag racing, only needed if you achieve times under 11.49 secs.

Solo II Autocross, no. Solo I autocross, maybe.
Track events, yes.
Read the rules. They are particular on design and metal type and size of piping.
This combo of roll bar and stlye bar looks just about right.

+1 Definitely DON'T need for Solo 2. I personally would never take a convertible on an open road course without a roll bar. I've seen too much carnage to take that chance. If you go that route, properly installed 5 point harnesses are also a must, I wouldn't rely on 3 point seat belts.
Oh, and Solo 2 autocross is a blast! If you've never competed in a timed driving event it's a great way to have some fun for very little $. Of course eventually someone will invite you to an open track day on a road course and you'll end up doing so much to your car that it'll end up a dedicated track car...

Agreed 100% on the 5 point harness. That vert is not mine, it is just an example of a vert with a bar that I saw at SVTOA Sebring this past april. I have the coupe in the photo below. As far as a roll bar, custom installation is your best bet. I do not have a bar in my 06 yet but I did in my last car which was an 03 S/C Mach 1. I will try to dig up a picture of it and post up.
Basically my harness bar that goes behind the seat was custom bent in order for me to move my race seat back. I am 6'6" and there was no "off the shelf" system, like autopower that would work for me. In my 06 I have a custom built "Butlerbilt" race seat with Simpson 5 point harness on custom made seat tracks that I use for track events. I also have my factory seat bracket modified to give my 4" of addition leg room with my factory seat. I am barely seen in this photo in the blue shirt talking to my student and the other half of "Fastduo" is the female in the photo.
Here is my car.

Where should I look for a true roll bar like that convertible has? I also have the light bar and wondered how difficult it would be to add the actual roll bar.
I apologize for my ignorance, but this kind of stuff really interests me and I don't necessarily know where to start to get involved in these kind of events.
Out of kindness, could you list what class a "stock" GT would be in?
What about a slightly modified mustang? What mods are allowed?
Thanks for the info and understanding!

Stock class for SCCA is F Stock.
The SCCA rule book tells you what is allowed for each class.
In stock, you can have different shocks, but not springs, different front sway bar, but not rear, different rotors but not calipers, its kinda crazy.

Here is the photo of the roll bar in my Mach 1. It was custom made by Racecar Builders of SouthFlorida in Ft. Pierce. He did excellent work and just about everyone I know has taken there car there after they saw his work on mine. Here is an example of a harness bar with the extra room us tall guys need.
