I just saw a old piece of crap Toyota Trecel with a "club" on the steering wheel. I thought to my self, "Who would even bother with that piece...".
Then it got me thinking, how theft proof is our Mustang? Any thoughts?

No car is theft proof. The best way to protect your car is put as many hinderances as possible to make it more difficult. The key being chipped and having an alarm help. IF you feel you need more than that, don't buy a club, they are pos. There is a bar that attaches to your brake pedal that is a better choice. A car cover with a locking cable also helps. Don't leave any visable goodies in your car and try to park in a high visability well lit area.
I'm more worried about a break in than getting it stolen.

you can also buy a full steering wheel steel cover device. Similar to club in that it doesn't allow steering, but covers the whole wheel and difficult to take off/saw off/drill through the lock, etc. Not impossible, but makes it more difficult. Devices such as "LowJack" can be jammed, so going low tech might work better in some cases.

A good friend of mine some years back had lots of trouble when his neighborhood suddenly went downhill, and he found evidence that someone really wanted an old VW Bus (with the panel windows at the top) that he had restored. He didn't have anywhere else to put it other than in his driveway at the time, so his quick fix was a fuel shutoff switch under the seat. Worked like a charm, they did manage to steal it 3 times but in each case all it took was a short ride around the neighborhood to find it sitting a couple blocks away.
Doesn't help much for Mustangs maybe but supports the idea that any low-tech hindrance you can come up with helps.

I suspect they didn't park it of their own volition. If the fuel cutoff was engaged the VW bus likely ran out of gas on them.

A very short time later he sold it to a collector in Japan, of all places, looking for a clean resto VW window bus. Go figure....however he made a very nice profit, and he also doesn't live in that neighborhood anymore.

Heck back in HS in North Philly in 1966 I had a 57 Chev 4dr. Our neighborhood started going downhill real fast. i had one of those cut-off switches installed as well. Worked like a charm. Car never got stolen but once I let a friend use it and i forgot to tell him about the switch.

This is exactly like something my old buddy would do. Pagers were just coming into vogue at the time and he was also a whiz at making his own electrical and mechanical contraptions. for isntance, he bent neon tubes as a hobby and made a battery-powered glowing neon necktie once. Also made his own flamethrower once out of an old fire extinguisher, an air pump, and a spoon but that's another story altogether, believe me.
He did install a VCR camera up under his eaves to tape the morons in his driveway. I could see a nice affordable accurate weapon like a silenced Ruger 223 being installed there as well and sighted in on the driver's seat, and triggered by an R/C servo actuated by a transmitter slaved to the door switch, say as it's closing. Then have the pager go off to alert the owner of a body needing disposal, and you've got a workable system that everyone can afford.
